Yesterday was my little man’s first birthday.  I still remember the beginning of October 2007 when I first met Frankie and took him home with me.  In my eyes hes is the cutest, sweetest pUP out there and I am so lucky to have found him. He’s got more personality than some people I know!

He was born on Aug. 9 2007 and has changed so much in the past year. Frankie came in to my life when he was just 8 weeks old and I now couldn’t imagine it without him.  He can be a pain in the butt at times but his cuteness always makes up for it.  Happy birthday Frankie C.

pUPscale Recipes- Peanut Butter Carrot Cake

Peanut Butter Carrot Cake

Frankie’s 1st B-Day!

Peanut Butter Carrot Cake

What you’ll need:

  • 1 cup flour
  • 1 tsp baking soda
  • 1/4 cup peanut butter
  • 1/4 cup vegetable oil
  • 1 cup shredded carrots
  • 1 tsp. vanilla
  • 1/3 cup honey
  • 1 egg

What to do:

Mix flour and baking soda. Add remaining ingredients. Pour into desired cake pan and bake at 350° for 30 minutes. Let cool.

Frosting Options:

  1. Puree cottage cheese in blender for icing. Decorate with more peanut butter and carrots.
  2. Frost cake with peanut butter. Decorate with dog bones and or colorful treats.
Tip:  To create the bone shape cake, I purchased a small tin foil rectangular loaf pan from the local supermarket.  I then shaped it into the desired bone shape and poured in the cake mix.

Makes:

2 small bone shaped cakes or one 8″ round cake
